My Paleo Valentines!

I know that I married my soul mate! I made him Paleo meatloaf for his Valentine’s dinner and he could not be happier. To be fair, it is his favorite. I always kid him that his love language is food. Giving the man a healthy dinner with 1/2 pound of meat on his plate was definitely the way to go! The recipe comes from the Everyday Paleo cookbook.

- This is not the original recipe from the cookbook. The only difference is that it calls for 2 teaspoons of black pepper. This is the secret ingredient for sure. Try it with 1 1/2 teaspoons at first if you are not sure. It brings out so much flavor.
- Another trick is to use a food processor (mine was $25 from Walmart) for all the ingredients except the almond meal and meat. Make sure to chop up your garlic before putting in the food processor. Honestly I tried it because I was in a hurry and did not want to cut up the onions. The family immediately noticed! I have made it this way ever since.
- I also like to cook it ahead of time so that it keeps its shape better and is not mushy.
- The only other trick is that I cook it in a Pampered Chef Mini Loaf Pan so that the loaves are about 1/2 pound each. If you don’t eat 2 pounds of meat in one week (like us!), then freezing is great! Just make sure that you freeze it raw, then cook it. You can cook it in a glass dish as well. You may need to cook it longer to make sure that you cook it wall the way through.
